
Tiramisù
All the beloved flavors of the Italian classic — mascarpone, espresso, and ladyfinger — now in gelato form.

Ingredients
- 01250g mascarpone cheese
- 02400ml whole milk
- 03150ml heavy cream
- 04120g caster sugar
- 053 egg yolks
- 0660ml strong espresso, cooled
- 072 tbsp coffee liqueur (Kahlúa or similar)
- 081 tsp vanilla extract
- 09Cocoa powder for dusting
- 104 savoiardi (ladyfingers), crumbled
Method

Whisk egg yolks with sugar until light and fluffy.

Heat milk and cream until steaming, then temper into the yolk mixture.

Cook gently until thickened, then remove from heat.

Whisk in mascarpone until smooth. Add espresso, coffee liqueur, and vanilla.

Chill the base thoroughly over an ice bath.

Churn for 25 minutes. In the last 5 minutes, add crumbled ladyfingers.

Transfer to a container and dust with cocoa powder on top. Freeze 2 hours.
