
Limone (Lemon Sorbetto)

Ingredients
- 01250ml fresh lemon juice (about 8 lemons)
- 02Zest of 4 lemons
- 03400ml water
- 04220g caster sugar
- 05Pinch of fine salt
Method

Combine water and sugar in a saucepan. Heat over medium until sugar dissolves to form a simple syrup.

Remove from heat and let cool to room temperature.

Stir in lemon juice, lemon zest, and salt.

Chill in the refrigerator for 1 hour.

Churn in an ice cream maker for 20–25 minutes until firm.

Freeze for 1 hour. Serve in hollowed-out lemon shells for theatre.
